13 Mar Gail’s Not-From-A-Box-Chocolate Cake
Chocolate Cake not from a Box!
What you Need
2/3 cup butter
1 1/2 cup sugar
2 eggs
1/2 tsp vanilla
Pinch of salt
1 2/3 cups strong cold coffee ( can be decaf)
1/2 cup really good cocoa
1 2/3 cups flour
1 tsp baking powder
1 tsp baking soda
What You Do:
Cream butter and sugar, then add eggs one at a time. Add salt, vanilla and coffee, beat together. I always taste it (not in foodsafe rules because of raw egg, but I am willing to risk all for the test taste)
Mix dry ingredients separately, and then blend all. Pour into an 8 inch springform pan well greased.
375 for 30 minutes, then check. It may need 15-20 minutes more depending on the toothpick test.
Let cool, then Top with Chocolate Ganache ( again, package of really good bittersweet dark chocolate chips melted over a double boiler, with heavy cream to thin to desired spreadabilty)
Try not to think about the ingredients when you have a piece!!!
